Salmon En Croute

Ideal for chilly winter days, @FationateFoodBelly's Salmon En Croûte is a total showstopper. We love how the flakey puff pastry wraps the salmon, capturing all of the aroma and flavor in one pocket.

Ingredients

  • Norwegian Atlantic Salmon
  • 1 onion, diced
  • 5 garlic, diced
  • 2 cups spinach
  • Lemon zest and juice
  • Lifeway Farmer Cheese
  • Salt and pepper
  • Dill
  • 2 puff pastry sheets
  • 1 egg yolk
  • 1 tsp milk

Instructions

If your salmon has skin, put skin side up on a wire rack and pour hot water over the skin then lightly peel the skin off. In a skillet, sauté garlic and onion until fragrant. Add spinach and cook until wilted. Season with salt and pepper for taste. Transfer into a bowl, zest the lemon and add a squeeze of lemon juice. Then add Lifeway Farmer Cheese and mix until well combined. The cheese helps creates a creamy/nutty texture that complements well with the salmon. Layer the puff pastry with spinach mix on the bottom, salmon in the middle and another layer of spinach mix over the salmon. Wrap the puff pastry sheet all around and create design of preference Bake in the oven at 425F for 23 mins.
