Blackened Cod with Warm Couscous Salad

Ingredients

  • 2 portions Blue Circle Foods Icelandic Cod, frozen
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 cup pearl couscous
  • 1 cup shredded cabbage mix
  • 2 tbsp chili oil
  • 1 lemon, juiced
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper. In a small bowl, combine the olive oil and Cajun seasoning. Rub the mixture thoroughly over the frozen cod. Sprinkle with salt and place on prepared baking sheet.Bake for 22 minutes at 400°F.
  2. Cook the couscous according to the package directions and season with salt. Toss the cooked couscous with the cabbage, chili oil, and half of the lemon juice. Plate the couscous mixture, place the cod on top, and drizzle with the remaining chili oil and lemon juice.
