Golden Fried Rice with Salmon
The beautiful golden hue of @fationatefoodbelly’s golden fried rice comes from egg yolks coating each grain of rice before cooking. It’s the simplicity that makes this dish shine. The key is to use good quality eggs for the rich and eggy flavor, and quality salmon to match.



Fried rice:

In a large bowl, add the cooked white rice, egg yolk and mix well until rice is well coated On medium-high heat, cook the rice until the grains separate then season with a pinch of salt. Make a space in the middle of the pan then add shallots, scallions, egg whites, and sambal crunch. Stir fry for a minute. Continuously stir fry with all the ingredients combined for another 2-3 minutes.


Cut into 1-inch cubes and season with salt. On medium-high heat, add about 3 tbsp of neutral oil. Once the oil is heated, add the salmon and fry until all edges are golden and crispy.
