Ingredients
- 3 cups arugula
- 1 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 1/4 cup red onions, diced
- 2 avocados, diced
- 1 mango, diced
- 1 cup quinoa, cooked
- 2 Norwegian Atlantic Salmon , cubed
- Salt & pepper to taste
For Dressing:
- 1 tbsp minced garlic
- 2 tbsp extra virgin olive oil
- 1 tbsp yuzu sauce
- 1 tbsp mustard
- 1 tbsp honey
- A sprinkle of pepper
Instructions
Heat 2 tablespoons of cooking oil in a pan over medium heat. Sear the cubed salmon until crispy on all sides. Season with salt and pepper. In a large bowl, combine all the salad ingredients. Add the dressing and toss everything together until well combined.
