Ingredients
- 2-3 The Matzo Project Everything Matzo Flats
- 3 eggs
- ¼ cup whole milk (or water for a lighter version)
- ½ tsp salt (adjust since lox is salty)
- ¼ tsp black pepper
- 1 tbsp unsalted butter
- 3 oz Blue Circle Foods Smoked Salmon
- 1 tbsp chopped fresh dill
- 1 tbsp finely chopped chives or green onions
- ½ cup sour cream or crème fraîche
- Lemon wedges (for serving)
Instructions
First, whisk together the eggs, milk, salt, and black pepper in a bowl to make your batter. Gently toss the matzo pieces in this egg mixture and let them soak for 1-2 minutes until they're soft but not soggy. Next, heat butter in a nonstick skillet over medium heat. Add the soaked matzo mixture to the pan, pressing down lightly, and cook for 2-3 minutes on each side until golden brown, flipping gently.
