Butternut Squash Pasta with Baked Salmon
@fationatefoodbelly’s butternut squash pasta is creamy, sweet, savory, and a little spicy with all the autumn flavors. Excellent paired with our Norwegian Atlantic Salmon.


Roasting ingredients:

  • 2 Norwegian Atlantic Salmon , seasoned with salt and pepper
  • 1 butternut squash, halved are seeded
  • 4 shallots, peeled and halved
  • 2 spicy red chilies
  • 3 carrots, peeled
  • 1 head garlic
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 tsp turmeric powder
  • 2 tsp paprika
  • 2 tsp salt
  • olive oil to drizzle

Liquid ingredients:

  • 1/2 can of coconut milk
  • 1 1/2 cup of chicken broth


Roast the ingredients listed under "Roasting ingredients" at 425°F for 12 minutes. Remove rosemary and thyme sprigs. Extract the squash and squeeze the roasted garlic out of the peel. Blend the baked vegetables, garlic, shallots, carrots, and chilies until smooth with the liquid ingredients. Boil your preferred pasta, strain, and mix in the butternut squash sauce. Finish by topping with roasted salmon and garnishing with fresh dill.
