Ingredients
- 1 Blue Circle Foods Atlantic Salmon Portion (frozen)
- 2 tsp za’atar seasoning
- 1½ cups cooked chickpeas (soaked + boiled)
- Olive oil
- Crumbled feta
- Thinly sliced red onion
- Pickled red peppers
- Fresh dill
- Sesame dressing or hummus
- Extra za’atar seasoning
- Salt + pepper
Instructions
Preheat oven to 400F. Line a baking sheet with parchment. Remove salmon portion from packaging and place on lined baking sheet. Rub salmon with 2 tsp za'atar seasoning and drizzle with 1 tsp olive oil. Transfer to preheated oven and bake for 22 mins. While the salmon cooks, put your chickpeas in a bowl with some olive oil, a little salt and pepper, and a good sprinkle of za’atar. Then, add the thinly sliced red onions, tangy pickled peppers, and crumbled feta. Once your salmon is ready, place it on top of the chickpea mix. Finish your bowl by drizzling it with some yummy sesame dressing or a dollop of hummus, then add a bit more feta, fresh dill, and an extra dash of za’atar for a perfect finish.
